Mary M.'s Recipe

Turkey Spinach Roll-ups

  • 2 8-ounce containers of whipped cream cheese
  • 6 Tablespoons of Major Grey's Chutney
  • 4 Tablespoons mayonnaise
  • 1 bunch of scallions, with some green stems, chopped
  • 10 small flour tortillas (1 package)
  • 1 pound thinly sliced cooked honey roasted turkey
  • 1 6 ounce package of fresh baby spinach leaves, thoroughly washed and patted dry

One day in advance:Stir together the cream cheese, chutney, mayonnaise, and scallions. Spread evenly over the ten tortillas. Top with turkey and spinach leaves. ( I have found that putting the spinach down before the turkey makes rolling easier.) Roll tortillas and lay seam side down in baking dish. Cover with a damp paper towel and then plastic wrap. Refrigerate.

Serving Day: Cut a little off the ends of each roll, then cut each roll into five slices. Yield: about 60 slices

Why is there a recipe on this website? Because everyone at the Feb.18th program loved these roll-ups!

"Because Blacksburg was one of the original 32 Affiliates of the Museum, ...( it has) ... first choice on the programs for the coming year before our other, newer partners." Jeffrey Allison, (pictured, top) VMFA, May 17, 2002.

Program information is available here, in local print media, member's email, BRAA newsletters, and reminder postcards. Last Minute schedule changes are announced by telephone, email and WVTF radio.
